The key is using the high quality white egg Hinata for this. Puff pastry tarts filled with burnt D24 durian egg custard. Burnt custard doesn't sound good but it is. Underneath the burn marks, the custard is smooth and creamy. The soft texture contrasts nicely with the crisp puff pastry shell.
